Wild organic ferment, aged in barriques

Pale lemon colour. Aromatics of brioche, roasted cashew and corn husk. Underpinned by lime zest, fennel fronds, & pink grapefruit. The palate is expansive & creamy but still retains a rich, crisp citrus zing and generous finish with signature fine-grained oak.

"Fantastic bouquet with aromas of a complex and detailed expression. Aromas and flavours of pure white and yellow fleshed stone fruits, citrus, apple, lees and a chalky limestone minerality. On the palate the wine has a detailed texture from acidity and fruit spice, careful use of barrel and plenty of lees autolysis. Fresh cashew nut and oyster shell, apple blossoms and white peach flavours. Lengthy finish leaves me wanting the whole bottle to myself. Vineyard Notes

2019 was a small year for Chardonnay, due to limited flowering in Spring, which required careful shoot selection and meticulous canopy management.  This allowed the small volumes of fruit to ripen over a lovely settled autumn. Organically managed, the combination of undervine cultivation and fewer irrigation cycles has driven the Chardonnay roots deep into the soil. Our Chardonnay is a blend of two main vineyard blocks. One block is limestone dominant, while the other is clay providing a balance of richness and crisp acidity. The two clones, Mendoza & Clone 95, flourish differently in both blocks. Mendoza is the cornerstone of our Chardonnay and is known for its small, open grape bunches, intense fruit-driven flavours and chalky minerality.

Winemaking Notes

We hand-picked our Chardonnay blocks so that only the best fruit was selected and processed without the use of additives to allow a wild ferment. This wild ferment gives us greater complexity than using a single packet yeast as some wineries do. We pressed our Limestone block as whole bunches to allow a gentle run of juice - as this block has small grapes with bright acidity and crunchy flavours. Our clay block provides richer, softer flavours so we foot crush this block to extract more structure. We settle the juice to allow for clean fermentation. We believe in showing the fruit flavours without too much of the flinty struck match aromatics that seem to be a current trend. The quality of the fruit we receive from our vineyard team is an honour so we want to show this without hiding behind winemaking tricks. Each block was fermented separately in French oak barriques without intervention, allowing the wild yeasts and bacteria to perform primary and malo-lactic fermentation through to completion. Barrel aged for 10 months before estate bottled without fining. Vegan.

Serving Notes

This wine will improve over the next 5 years but some of its prettienss right now is the lovely primary fruit so choose whether you prefer richness ( age 5+ yrs ) or crisp fruit ( drink now to 2026 ) on your aging window. This wine combines some of the umami savoury characters and lime zest freshness of Chardonnay grown on limestone- so i love it served with the clean flavours of Japanese food- be it grilled salmon, agedashi tofu or crispy softshell crab.
