Estate grown organic Pinot Noir

Our estate grown Pinot Noir with generous richness & flavour concentration. Layers of ripe fruit, floral and spice unfold on the palate with a delicate tannin line.  Unfined and bottled on site. Over 60% of our vines are Pinot Noir and the whole reason we exist on these limestone slopes is to make great Pinot. These calcareous clay soils are ideal for growing Pinot with beautiful finesse and aromatics. There are a mix of Pinot Noir clones grown here that give this wine complexity - like a choir rather than the singular voice if only one clone was used.

Vineyard Notes

The first week of November and the month of December were very hot and dry - perfect conditions for flowering. The vines produced a solid crop with large bunches. Careful leaf plucking to open the canopy and significant bunch thinning was required to ensure quality targets were met. Rain in January and February gave the soils a top up and ensured canopies stayed healthy. Overall one of the warmest seasons of the last 10 years produced beautiful, healthy Pinot bunches with great flavour intensity.

Winemaking Notes

Our approach is simple and traditional. After careful hand picking and sorting each batch of Pinot Noir was allowed to soak on skins at ambient temperatures before going through wild fermentation. We gently hand plunged each vat daily before pressing to French oak barriques after one month maceration. Each barrel goes through a natural malo-lactic fermentation the following Summer, before blending and bottling 12 months after harvest.

Serving Notes

Dom, our winemaker, has a special request not to serve Pinot Noir too warm as it damages the delicate fruit aromatics. For best results try serving at the temperature of a castle's underground wine cellar, about 14-16c. If you are not currently in possession of a castle - then maybe just keep the wine in a cupboard or wine fridge to ensure it doesn't get too hot. For food pairing something like confit duck would be fantastic, or maybe roasted mushrooms en papillote. This is a more delicate vintage of Pinot Noir that will reward food with subtlety and complexity - maybe even Moussaka or baked ricotta pasta... a little creaminess would work well.
