Eye - Deep ruby red
Nose - Rich plum and raisin notes
Taste - Plum/raisin intertwined with baking spice. Dark honey and sandalwood. Warming and luscious
Hand harvested very late in the season and very ripe.
Fruit is de-steamed and crushed, fermentation is quick with a large amount of hand plunging for maximum extraction.
After fortification, wine is run to old barrels. Slowly aged in our cellar using the Solera system, slowly blending many vintages as they age.
Only made in outstanding years.
