2023 Maxim Chenin Blanc (Hawke’s Bay)

Picked in early April (a late harvest following the cyclone). Hand-picked, whole-bunch pressed to two-year-old and seasoned hogsheads. Wild ferment for complexity. Bâtonnage for 3 months, then aged on full lees for 12 months. Racked to a one-of-a-kind stainless-steel egg for a further 6 months. Vegan friendly.
Residual sugar: 3.3 g/L (dry). Vegan Friendly
Tasting Quince, nashi pear and lemon peel unwind into chamomile, beeswax and flinty minerality. The palate is taut yet layered—silky mid-weight texture from long lees ageing, bright acidity, and a saline, mouth-watering finish. Serve & Cellar Chilled (8–10 °C) with goat’s cheese, roast chicken, pork belly, or miso-glazed eggplant.
Drink now or cellar 6–8 years.
