Pask Declaration Cabernet Merlot Malbec 2020 750ml

Winemakers Notes | Grapes from our McMerlot block and Watercourse blocks were hand harvested and fermented in stainless steel closed fermenters. The young wines were aged in predominantly new French Oak for 15 months with regular racking, tasting and evaluating. Estate bottlesd on the 18th of November 2021 and carefully cellared for 5 years prior to release.

Vintage Detail | After a spring with few frost events, the ne year brought the long, hot summer days and cool nights that Hawke's Bay is renowned for. February saw no rainfall with very drying conditions in the lead up to harvest. Early ripening meant picking began at the start of March. An excellent vintage all round.

Pairings | This wine pairs beautifully with rosemary and garlic crusted lamb, slow braised beef short ribs, or venison with blackcurrant jus - where the dark fruit and savoury notes echo in the richness of the dish. It would also compliment aged cheddar or a firm, nutty comte, with the refined tannins and oak integrating seamlessly alongside mature cheeses.

92/100 | Dark ruby. Cedar, blackcurrant, tobacco leaf and cocoa with a layer of sweet oak and pencil shavings on a nose which is just tipping into early adolescence. The palate is sleek with late but plentiful tannins; blackcurrant and leaf flavours giving way to oak on the back. Still young but beginning to unfold. A few more years for the chewy tannins to give way and should offer elegance and length.

Deep ruby and still youthful, this powerful yet elegant blend opens with concentrated black cassis and ripe blackcurrant layered with cedar, tobacco leaf, coca and subtle dried sage. Matured for 15 months in predominantly new French Oak, it is mouth-filling and sleek, with plum spice and pepper notes supported by refined, plentiful tannins. Supple and harmonious, it is highly approachable now, with it's best drinking still to come - this wine will cellar comfortably until 2035+
