Pask Declaration Chardonnay 2024 750ml

A beautiful radiant pale yellow in the glass.  Very vibrant nose which delivers a lovely blend of cream brulee, dried apricots and white peach.  The wine coats the pallet with a rich warm mouthfeel, a gorgeous vanilla, nutty, yeasty creaminess complimented with stone fruits, pineapple with a clean minerality acid drive that delivers a long lingering finish. 

Blend of Clone 15 and Mendoza off our settlement vineyard, kept separate during the fermentation process with the best blended together for bottling. 

Gently pressed in different parcels, the free run juice was pressed to French Oak barrels and gently warmed to promote wild fermentation. Following this the Chardonnay underwent 100% Malolactic fermentation and was stirred weekly for ten months to promote weight and depth on the pallet. Then carefully racked out of barrel to keep the wine as clean as possible as to avoid adding any fining agents.

"The invitingly fragrant 2021 vintage was fermented and matured for 15 months in predominantly new French oak casks.  Bright, light yellow/green, it is mouthfilling and fleshy, with rich, ripe stonefruit flavours, and toasty, buttery notes adding complexity.  Already delicious, it's a finely textured wine, vigorous, savoury and very harmonious.  Best drinking 2026+.

Cameron Douglas 94 POINTS ~ 2025 "A big bouquet filled with scents of smoke and oak, baked peach and apple, then Brazil-nut butter and baking spices. Equally big and proud on the palate, full-bodied and dry, textures from tannins and acidity frame the core fruit flavours of yellow fleshed stone fruits then apple and nut, especially Brazil. Acidity and tannin textures sit nicely with the fruit and with a lengthy finish this wine is ready to smash. It’s delicious and a decent mouthful, well done the Pask team. Best drinking from day of purchase through 2029.

Pale in color, with lovely straw margins, on the nose the wine has subtle notes of toasty oak, white stone fruits with just a hint of oyster shell and pithy citrus. These aromatics follow through to the palate with zesty citrus and mellow creamy yeast flavors with a balanced lengthy finish.
