Nous
Chardonnay 2023 750ml

6 bottles of our 2023 Nous Chardonnay from a small yielding year (250g/vine or 2.9 ton/ha). A restrained and pure Chardonnay with mealy undertones and a fine boned acid structure running through the palate. 

Growing Season: Another very wet winter (with a record breaking 247mm in July 2022) setting up ideal conditions for the growing season. After a mild spring with few frost events the season was kind. A warm spring and summer with well timed rainfall throughout.

Harvested: 12th March 2022 by Rachael, Murray, Chloe, Maddie, Joao, Elisa, James, Dorien, Greg, Nigel, Saul + Lorenzo from dawn until lunch.

Elevage: Gentle pressing straight to barrel for fermentation. Natural fermentation largely completed by the end of winter, with MLF naturally taking place in spring.

Bottled: 700 bottles in mid September 2024 (18 months in barrel) without fining or filtration.
