Novum is singularly focused on one thing: making fine wine that stays with you. Rooted in Marlborough, we chase clarity, individuality and the quiet kind of beauty that comes from a thousand small decisions in vineyard and winery. We use a pragmatic “toolbox” of old and new techniques, constant experimentation and a refusal to follow rules for their own sake — only those that move us closer to a distilled expression of place. Staying deliberately small keeps the work personal: hand‑waxed bottles, careful picking, basket‑pressing and the attention each parcel demands.
Our vineyard work is the engine of everything we do. Years of walking rows, tasting corners and mapping differences led to our Sweet Spot Theory — the belief that the best fruit comes from tiny, distinct pockets within a site. That philosophy informs how we farm Riverbrook (the stony, former riverbed that gives our Chardonnay its minerality) and Quarters (rich clay that brings depth to our Pinot). Novum is a promise to the land, to the people who tend it and to those who open our bottles: wines made with curiosity, restraint and the aim of saying unmistakably “this came from here.”

Novum Quarters Vineyard Pinot Noir 2024
A considered wine with balance and articulate detail of dark cherries, pomegranate and raspberry leaf. Its small portion of whole bunch almost outlines the ripe fruit, adding a stencil of sage and rosemary that brings the wine into focus. Some savoury new oak, cedar, chewing tobacco and mace round out the finish.
The crowning glory is the thistle and underbrush that pulls and stretches the final flavours of the wine.

Novum Riverbrook Vineyard Chardonnay 2024

Fantastic wine, taut and youthful with a bouquet of flinty, fresh stone and citrus fruits, a positive gentle reductive layer and mineral fine lees complexity. A dry wine with plenty of weight and a satin mouthfeel, flavours range from white apricot and peach to apple and sweet grapefuit. Layers of wood introduce fine tannins and a natural wood sweetness, as well as added complexity and length. Well made with best drinking from day of purchase through 2032+
