Vineyard Information:

Specifically sourced from two vineyards in two different subregions of Central Otago, our Ayrburn Pinot Noir offers the elegance, perfume and freshness of the Gibbston Valley and the purity of fruit and power of Bannockburn. The combination of these two subregions produces a beautifully balanced and characterful expression of Central Otago Pinot Noir.

Winemaking:

The fruit was hand-picked and carefully transported to the winery where the individual parcels were kept separate, fermented in two open-top fermenters. A small whole-bunch proportion was used to give aromatic lift and introduce more complex tannin to the wine. After fermentation, the wine was matured in French oak barriques (30% new) where it underwent natural malolactic fermentation in the warmer spring months. The parcels were blended together and allowed to gently settle before being bottled the year after harvest.
