Winemaking Winemaker: Dean Shaw Fermentation: Cold soak for one week followed by a fermentation over one week with one hand plunge per day, followed by post fermentation maceration for another 10 days.  Barrel: 10 months in French Oak, 20% new French Oak Bottled: 7 February 2019 Vintage note: Stunning!

Food pairings

Lamb, chargrilled steak, wild venison.  A cassoulet or duck with olive would suit this vintage.  Make a coq au vin and use Pinot Noir in the sauce.  Glazed ham.  Roast turkey.  Pair it with a truffle brie or a light blue cheese.
