Tasting Notes

Youthfully expressed and inviting, the bouquet shows green pear, crunchy apple, oatmeal and subtle spice aromas, followed by a juicy palate displaying fine flow and refreshing acidity.

Gorgeously rounded with a delicate dry finish.

Vintage notes

Cool & wet, smaller berries with a great concentration and structure.  Fruit was in great condition with an average yield.

Food pairings

Lovely with poultry dishes, salmon, salads, grilled vegetables, soft cheeses like brie and camembert, burrata or feta.

Grape variety: a selection of various Pinot Gris clones  Harvest date: 23 & 24 April 2023

Winemaking

Winemaker: Dean Shaw Fermentation: fruit was gently pressed to stainless steel tanks & older French oak.  Indigenous yeast fermentation occurred over 3 months.  Wine remained on yeast lees for four months for complexity and texture.

Alcohol: 13.5% Residual sugar: 0-2 g/l Titratable acidity: 6.0 g/l pH level: 3.24
