Tasting Notes
A lovely balanced wine with aromas of honey blossom, papaya and melon. The palate is smooth, with ripe fruit balanced by fresh acidity. A touch of spice and delicate florals add complexity, finishing soft & elegant.
Vintage notes
Picked at 23.50 Brix. Fruit was in great condition with a high yield.
Food pairings
Lovely with poultry dishes, salmon, salads, grilled vegetables, soft cheeses like brie and camembert, burrata or feta.

Grape variety: a selection of various Pinot Gris clones Harvest date: 18 April 2025
Winemaking
Winemaker: Dean Shaw Fermentation: fruit was gently pressed to stainless steel tanks & older French oak. Settled in oak for 5 months in 100% old oak. Indigenous yeast fermentation occurred over 3 months. Wine remained on yeast lees for four months for complexity and texture.
