Welcome to Sato Wines
Started as a small project by a Japanese couple Yoshiaki & Kyoko Sato in 2009 in Central Otago, Sato Wines has been always aiming at making wines with a low intervention, natural winemaking approach to express and capture the characterics of the land, the fruits and the seasons that the nature offers. Now based in Pisa region by Lake Dunstan on the east facing slope, we grow 5 different grape varieties on alluvial sandy silt soil with schist and quartz.
After saying goodby to the financial carriers and urban life in Tokyo, we have experienced a lot with our hands in the dirt and the grapes. While working in New Zealand, we learned a lot and got inspired from the natural wine producers in the traditional countries such as France. We started our project of making wines with the grapes we purchased from our friend's organic vineyards. We still make the wines like this way today.
In 2016 we planted the vines from scratch in 5 ha land in Pisa sub region, on the east facing slope at the altitue of 298 to 349m. We planted Pinot Noir, Chardonnay, Chenin Blanc, and small amounts of Cabernet Franc and Gamay. This small piece of land has a great view but is influenced by strong wind. We keep our vineyard as organic and with biodynamic practices. The soil is alluvial, sandy and silty soil with schist and quartz, the mixture varying from top terrace to the bottom of the slope on the schist mother rock. Influenced by the altitude, aspect and soil and the micro climate surrounding, our wines from Pisa Vineyard express floral and uplifting aroma, and capture the purity of the fruits with bright acidity, giving linear and tight feel in the mouth at the end which will not make you bored.
From the vineyard to the cellar we make every effort not to intervene in the natural evolution of the grapes into wine. Our wine may, in time, exhibit natural sediments.

It develops beautifully in the glass with apple pie, smoke and hints of ginger. The persistent finish has just the right amount of bitterness and salted butter at the end. Drink or hold."
