La Ferme de Sato Le Chant du Vent Chardonnay 2023 750ml
We would like Chardonnay, 0.92 ha in total, to represent the whole of our estate as well as Pinot Noir. So we planted this variety across the 3 blocks from the top to the bottom of the estate.
Our vineyard has a great view, which means it is very exposed against the strong wind or gust and the vines and ourselves are forced to live with it. When it is very windy in the vineyard, some winds go through the holes on the vineyard posts and create sounds like flutes making all through the vineyard. It is like the vineyard is singing “song of the wind = Le Chant du Vent”.
"Dried-apple and sliced-pear aromas with seashells and flint follow through to a full body with density and lightness at the same time. It develops beautifully in the glass with apple pie, smoke and hints of ginger. The persistent finish has just the right amount of bitterness and salted butter at the end. Drink or hold. Screw cap."
