Welcome to Halite Wines e-cellar door

From my base in Martinborough, I make small-batch wines under Halite, one of Aotearoa’s tiniest producers, grounded in organics and a gentle, low-intervention approach. These are ‘salt of the earth’ wines; balanced, textured and full of life, but above all, simply delicious.

I’m Haidee, the winemaker behind Halite. I founded it in 2021 after starting a family and feeling the quiet pull back toward winemaking. Halite connects me to who I am. A space to create, to express, and to let instinct guide the process.

Halite 'Sel de Terre' Sauvignon Blanc 2025, Martinborough

A lovely expression filled with flavours of lemon and grapefruit then a touch of cape gooseberry and sweet hay. The lees add texture, length and complexity building power on the palate with each new taste. A touch of fruit spice on the finish with a backbone of acidity to carry flavour and brightness. Well made with best drinking from early 2026 through 2030.

Halite Light Dry Red 2025, Martinborough & Mangatahi

A blend of Sangiovese and Pinot Noir, fermented separately, a bouquet of flowers and light red berry fruit scents. Cherry then raspberry, clay then stone, spice then lees. A dry wine of the palate with textures from tannins then acidity framing core fruit flavours that reflect the bouquet. Crisp and dry, balanced and well made, a wine perfect for summer drinking - chilled or cellar temperature. Best from January 2026 through 2028.

Halite Pinot Noir 2024, Martinborough

Tasted over three days this wine is textured, varietal, modern, real and delicious. Aromas and flavours of fresh red apple and cherry then a pommegranate and red melon quality. Textured from fine through corase silk tannins and acidity envelop the palate and core fruit flavours. Fresh and lively, well made and developing. Best drinkning from day of puchase through 2032+.
