Vintage
Leading into the 2024/25 growing season, forecasts pointed to a continuation of the El Niño pattern, followed by an emerging shift toward a milder La Niña influence as the season progressed.
Spring (September–October 2024) was mild and relatively dry, with only minor frost events, allowing vineyards to establish strong, even early growth. Flowering and fruit set occurred under favourable conditions, resulting in balanced yields and uniform ripening.
From mid-December onward, North Canterbury experienced a near-average summer in warmth, marked by dry days, cool nights, and stable weather. These conditions persisted through harvest and into a cool, gentle autumn, which provided an extended hang time for fruit to achieve full maturity.
The resulting fruit displayed excellent flavour concentration, ripe phenolics, and beautifully balanced natural acidity. The 2025 vintage produced wines of vibrancy, poise, and expressive varietal character — a season that captured the region’s hallmark clarity, texture, and refinement.
Vinification
The 2025 Pink Noise Rosé is crafted from estate-grown Pinot Noir, Cabernet Sauvignon, and a small portion of Cabernet Franc. Grapes are hand-harvested and gently whole-bunch pressed over five hours. The juice is settled overnight before being racked off gross solids, retaining only the fluffy lees.
Approximately 10% of the juice remains on gross lees and is held at 2°C for stabulation over seven days, during which the lees are gently stirred every 12 hours. This process enhances both aromatic intensity and textural complexity in the resulting wine.
Fermentation proceeds slowly at low temperature, allowing careful balance of sugar, acid, alcohol, and phenolics. The majority of the wine is fermented in stainless steel, while 10% undergoes fermentation and aging in old French oak barrels, contributing subtle depth and structure. After fermentation, the wine is racked and spends six months on fine lees before bottling, resulting in a Rosé of finesse, vibrancy, and layered complexity.
Wine
A luminous pink coral with a sunset hue.
The nose is initially bright and pure, opening with aromas of wild strawberry, redcurrant, and watermelon, layered with delicate hints of pink grapefruit zest and rose petals.
On the palate it is vibrant and juicy, carrying flavours of crushed berries laced with citrus. A fine, textural mouthfeel is balanced by a fresh acid line, leading to a long, focused finish with lingering notes of cranberry, mineral salinity, and a whisper of savoury spice.
